Ideas for Thanksgiving Leftovers

One of the greatest benefits of Thanksgiving feasts is the vast amount of leftovers. Eating the same thing over and over can get boring quick though. So since we’ll all be eating the same food for the next few days, we’ve decided to turn the holiday leftovers from boring to brilliant. Keep relaxing at home, you won’t have to run to the grocery store at all for any of these ideas. Here are some recipe ideas to help you get rid of all of that turkey:

 

turkey salad1. Turkey Cobb Salad

  • 4 slices (4 ounces) bacon
  • 3 tablespoons red-wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • Coarse salt and freshly ground pepper
  • 1 large head romaine lettuce shredded
  • 8 ounces (2 cups) roasted turkey breast, cut into 3/4 inch dice
  • 1 ripe avocado, pitted, peeled and thinly sliced
  • 3 ounces (3/4 cup) blue cheese, crumbled
  • 2 hard cooked eggs
  • 2 tomatoes cut into 1/2 inch
  • (If you are not a fan of bacon, avocado or eggs you do not have to include in your salad)

  • 1/4 cup (1/2 stick) plus 2 tablespoons unsalted butter
  • 1 small yellow onion, diced small
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 3 cups whole milk, room temperature
  • coarse salt and ground pepper
  • 6 1/2 cups broccoli florets (from1 bunch)
  • 4 cups cooked turkey, cut into 3/4 inch pieces

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 large sweet potato (about 12 ounces) thinly sliced
  • 1 can (14.5 ounces) diced tomatoes with juice
  • 1 can (14.5 ounces) reduced sodium chicken broth
  • 1/2 teaspoon dried crushed rosemary
  • coarse salt and ground pepper
  • 1 pound cooked turkey breast

  • 1/3 cup of mayonnaise or salad dressing
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • 1/3 teaspoon garlic powder
  • 8 large spinach leaves
  • 1/2 sliced over roasted turkey breast
  • 1/2 chopped drained roasted red bell peppers
